Cupuassu is a tropical tree from Amazonian regions in Colombia, is also popular in Brasil, Ecuador and Perú. Cupuassu is a small to medium tree in the Rainforest canopy which belongs to the Chocolate family and can reach up to 20 meters in height which mature fruit can reach more than one kilo in weigh.
Is also known as white cocoa because its seeds contain a white, aromatic fat, similar to that in cocoa butter (capulate), from which liquors, tablets and powder can be obtained.
Its butter is used in Brasil for making white chocolate.
*Cupuassu fruit is also known for being quite versatile in the kitchen Its pulp is very appropiate for preparing nectars, jellies, ice creams, cocktails, candies, desserts, and marmalades. Its high contents of pectine allows longer conservation and storage times.
*It is a good source of carbohydrates and fats. Its seeds provide a good amount of proteins, being used in the production of make up and moisturizings for the skin.
